Drain the chicken, reserving the marinade, and pat dry with kitchen paper. The French call it chasseur, the Spanish cazadores (cazador means hunter in English), the Italians cacciatore
note* Different cuts or sizes of chicken will alter the cooking time. In a skillet,in hot olive oil, cook skinless chicken until it's evenly browned, remove to casserole dish
Season chicken with salt and pepper. Alternatively, you can brown the chicken after removing the skin, and then pour off most of the fat before cooking the vegetables
