Ingredients

  • MARU BHAJIAS
  • 6 to 8 servings
  • 1 kg potatoes (about 5 to 6 big potatoes)
  • 1½ cups chickpea flour (chana flour, besan flour)
  • ¼ cup rice flour
  • 1 tsp turmeric powder (haldi)
  • 1 to 2 tsp green chilli paste
  • 2 tsp ginger paste
  • 2 tsp garlic paste
  • 1½ tsp salt
  • 1 tsp red chilli powder
  • 1 tsp sugar
  • ½ cup chopped fresh coriander
  • 2 lemons
  •  
  • For the chutney
  • 1 cup lightly packed peeled and grated carrot
  • 1 cup lightly packed peeled and grated cucumber
  • 3 medium tomatoes
  • ½ cup fresh chopped coriander
  • 1 tsp ginger paste
  • 2 to 3 tsp green chilli paste
  • ½ tsp garlic paste
  • ¾ to 1 tsp salt
  • 3 tbsp tamarind paste
