  • 40 Gluten-Free, Dairy-Free Recipes – We love kale and buy a big bag each month from Costco. The majority of this bag is used up in smoothies, but it would be so great to incorporate more of this incredibly nutritious vegetable into our meals. This book is allergy-friendly, so the family without food allergies might not have many of the flours needed for the baked goods (i.e. coconut flour or almond flour), but there are PLENTY of non-baked recipes that use kale that I frankly would never have thought of. Rainbow Hummus Tostadas (meatless meal), Late Summer Chicken & Vegetable Skillet, burgers and even meatballs! The recipes in this book deserve a second glance, so I’ll be thumbing through this one again when I make next month’s meal plan.
