Ingredients

  • 3 huge bundles of red leaf lettuce for
  • 1 this past weekend
  • 1 bunch of red leaf lettuce, chopped
  • 2 large carrots, peeled (I literally use a vegetable peeler and peel off slices- it makes the salad feel fancier! And I like the texture of the thin carrots slice)
  • 1 head of broccoli, chopped
  • 1 cucumber, chopped
  • 1 red or white onion, sliced
  • 2 pieces of salmon
  • 2-3 TB of balsamic vinegar
  • 375 until flaky, about 10-15 minutes depending on the size of your fish. Meanwhile, chopped the veggies and combine together in a large bowl. Make your own raspberry dressing or use store-bought. I used a raspberry dressing from my absolute favorite cookbook in the world, Simply in Season.
  • 1 lb arugula
  • 1 cucumber, chopped
  • 2 carrots, peeled
  • 3 ounces of plain goat cheese, crumbled (not paleo)
  • 1 red onion, sliced
  • 2 pieces of salmon
  • 375 for 10-15 minutes, until flaky. Meanwhile chop the veggies and combine the rest of the ingredients. Make the strawberry dressing:
  • 1 cup fresh strawberries, sliced
  • 4 tsp rice vinegar
  • 4 tsp fresh lemon juice
  • 1 tb honey (optional)
  • 1 red pepper, chopped
  • 1/2 cucumber, chopped
  • 1 ounce herbed goat cheese, crumbled
