  • 6-7 ears sweet corn (regular sized) cooked and cooled, kernels cut off ¾ C mayonnaise ¾ C sour cream 8 oz cream cheese, soft 1 lb bacon, cut into small pieces 1 small sweet onion, chopped 1 poblano pepper, roasted on the grill and chopped 1 8.8 oz package Chihuahua cheese, shredded Instructions Cook corn by boiling, grilling or in the microwave. Cut off kernels. In a skillet cook bacon, sweet onion and roasted (and chopped) poblano pepper- until bacon is cooked. Combine cream cheese (reserve just a bit to sprinkle on top), mayo, sour cream and cheese in a large bowl with a mixer(it is just better that way). Add the bacon mixture, mix to combine, then add the corn. Pour mix into a baking dish (I used a 13x9 glass baking dish) and sprinkle with remaining cheese. Bake at 350 degrees for 15 minutes or until it is bubbly and lightly browned. Serve immediately. 3.3.3077
