What’s Greek food without pita. Still good… but with the Paleo pita, even better. I find grain free pita or naan tends to be egg-y, or more like a savory pancake, which has it’s place, just not in my tzatziki
One of my favorite ways to eat leftovers is by making a Lamb Pita with some Tzatziki. It can be served with meats, like on this Lamb Pita or you can use it as a dip and serve it with fresh vegetables or crackers
Place the pitas on the tray and bake them in the for oven 2-3 min per side ,it will rise automatically. Remove pitas from tray ,let it cool for 2 mins ,then cut is into two halfs and pita pockets are ready to fill with your choice of stuffing or you can fridge it for later use
Pita or pitta is thick, flat bread baked from wheat flour (white or whole wheat). Few years back, my kids and I went one of my Singapore friend Sheeju’s house and she treated us some delicious items including quick and easy pizzas with pita/pitta bread
