Ingredients

  • 6-7 inches or

  • 360 ml water
  • 1/2 tsp white pepper
  • 1 tsp sesame oil
  • 1/2 tsp sugar
  • 1 1/2 tsp salt
  • 2 tbsp oil
  • 2 cloves garlic
  • 50 g dried shrimps

  • 300 g yam
  • 2 cm cubes
  • 200 g rice flour
  • 300 ml water
  • 1 spring onion, finely sliced
  • 1-2 red chili, finely sliced
  • 5 shallots, finely sliced and fried until deep golden brown and crispy
  • 1 tsp white sesame seeds, toasted to light golden colour
  • Sweet sauce, see below
  • 75 ml (1/4 cup + 1 tbsp) water
  • 25 g caster sugar
  • 1/2 tbsp light soy sauce
  • 3/4 tbsp dark soy sauce
