Ingredients

  • 1 packet of mixed free-range chicken thighs and legs (my pack had 3 thighs and 2 legs)
  • 1/2 large onion - roughly chopped
  • 1 medium carrot - roughly chopped
  • 1 large celery - roughly chopped
  • 3 small potatoes - roughly chopped
  • 3 victoria plums - quartered
  • 1 bulb of garlic - cut in half through the middle
  • a selection of fresh herbs
  • a little seasoning and olive oil
