Ingredients

  • Makes 24 to 48 cookies
  • 1 cup (96 grams) almond meal (ground almonds)
  • 1 cup (140 grams) whole almonds
  • 1 cup (85 grams) sliced or slivered almonds
  • 3 large eggs at room temperature
  • 1 tsp (5 ml) vanilla extract
  • 1/4 tsp (1.25 ml) almond extract
  • 2 cups (250 grams) all purpose flour
  • 1 cup (200 grams) sugar
  • 1 tsp (5 ml) baking soda
  • Pinch of salt
  • Powdered sugar (a.k.a. icing or confectioner’s)
