Ingredients

  • 1 1/2 sticks cold unsalted butter, cubed
  • 1/2   cup ice water
  • 2/3 cup walnuts
  • 1/2 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon  kosher salt
  • 6 tablespoons cold unsalted butter, cubed
  • 2 Granny Smith apples—halved, cored and thinly sliced lengthwise
  • 2 firm Bartlett pears—halved, cored and sliced lengthwise 1/4 inch thick
  • 1/4 cup granulated sugar, plus more for sprinkling
  • 1/4 teaspoon kosher salt
  • 2 teaspoons fresh lemon juice
  • 1 large egg beaten with 1 teaspoon water
  • Confectioners’ sugar, for dusting (optional)
