Ingredients

  • 1/2 hours at
  • 325 degrees
  • 1 lemon, zested and then cut into quarters
  • 1 tablespoon chopped fresh rosemary
  • leaves or 1/2 teaspoon dried
  • 1 oven stuffer roaster, about 4
  • to 5 pounds, rinsed and patted dry
  • 1 small red onion, peeled and
  • quartered
  • 1 tart apple, such as Granny Smith
  • or Stayman, cut into quarters
  • Sea salt, to taste
  • Freshly ground black pepper
  • 1 cup apple cider
  • 3 sweet potatoes, scrubbed and cut into large chunks
  • 3 carrots, peeled and cut into large chunks
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground pepper
