Apple Cinnamon Oatmeal Quick Bread

2 loaves, one for us, and one for our real-life neighbor. Although I've lived next to her for almost a year, I'd never actually spoken to her until mid-December when she brought over some bread and her contact information, asking us to keep an eye on her house while she went out of town. It was such an unexpected, lovely gift. It made me happy, yet also sad that it had taken so long for us to have a real conversation.
Apple Cinnamon Oatmeal Quick Bread
Ingredients
2 cups Chobani plain Greek yogurt
1/3 cup milk
2 cups quick cooking oats*
1 teaspoon vanilla extract
2 eggs
1/2 cup canola oil
1/2 cup packed brown sugar
1 ripe banana, mashed**
1 1/3 cups all-purpose flour
1 1/3 cups whole wheat flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 large gala apple, cut into small pieces. (Reserve a few thin slices for decoration if you like.)
*I don't usually have quick-cooking oats around, but you can make your own by pulsing 2 cups regular old-fashioned oats in the food processor a couple times.
**If you don't have a banana, you could replace with 1/4 cup applesauce, honey, or brown sugar
