It's simple recipe with few ingredients (and a bit of cheater's recipe with the packages of instant oatmeal), but the applecinnamonoatmeal bread is one of the very first recipes that I made seven-odd years ago, around the same time that I became obsessed with watching Christine Cushing, Anna Olson, Jamie Oliver, and Iron Chef
Add to a bowl - the oats, apple sauce, yoghurt, cinnamon, sukrin gold and egg and whisk to combine. Preheat oven to 190c/375f. Bake in the oven for 40 mins till set and lightly golden
I'm not a nuts or raisins in my oatmeal kind of girl, but if you are, you can add one or both to the dry ingredients before mixing in the milk/egg mixture
Add apple mixture and stir to combine. Just before the egg mixture is ready, heat the clarified butter until very hot and pour it into the reserved large bowl
Finally, fold with a spatula the peeled apples cut into small pieces. Preheat the oven to 180ºC / (350ºF). Grease a loaf tin (approximately 25 x 11 centimeters / (9 3/4 x 4 1/3 inches)) with margarine and dust with flour. Add the liquid caramel, the cinnamon powder and mix for 2 to 3 minutes until it’s nicely incorporated

Since I’m not a fan of fruit, and get tired of veggies and hummus, I often opt for an energy bar. Combine apples with lemon zest and juice in a food processor (alternatively shred the apples and place in a bowl)
