Ingredients

  • 3 ounces sultanas (80g) (optional) or 3 ounces raisins (optional)
  • 4 tablespoons water
  • 2 cups plain flour (280g)
  • 1/2 teaspoon ground cinnamon

  • 1/2 teaspoon baking powder
  • 1 1/4 teaspoons baking soda
  • 1/2 cup olive oil (120ml)
  • 3/4 cup caster sugar (160g)
  • 1/2 vanilla pod or 1 teaspoon vanilla extract
  • 2 eggs, lightly beaten
  • 3 small bramley apples (about 360 g) or 4 small granny smith apples, peeled, cored and diced into 1 cm or 1/2 inch cubes (about 360 g)

  • 100 g light muscavado sugar
