Ingredients

  • 2 ounces butter softened (1/4 cup)
  • 190 g of caster sugar (1 cup)
  • 1 large free range egg
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp freshly grated nutmeg
  • 150 g of plain flour, sifted (1 cup)
  • 2 TBS hot water
  • 1 tsp vanilla extract
  • 3 large granny smith apples, peeled, cored and chopped (about 3 cups)
  •  
  • For the Sauce
  • 100 g of soft light brown sugar (1/2 cup firmly packed)
  • 85 g of caster sugar (1/2 cup)
  • 5 TBS butter, softened
  • 125 ml of heavy cream (1/2 cup)
  • 1 tsp rum flavouring (You can use 1 TBS of real rum if you wish)
