sweet potatoes 5 red or green apples, chopped, plus one for decorating 3 - 4 Tbsp fat - coconut oil, ghee, butter or tallow 2 Tbsp sucanat or other healthier sugar 1 Tbsp honey 1 tsp cinnamon handful of raisins Instructions Preheat the oven to 180°C / 350°F. While thats heating, prep two large baking trays with parchment paper. Slice the sweet potatoes thin and lay them flat on the tray, brushing them with some of the fat. Pop them in the oven for about 5 - 8 minutes, flip them and cook the other side for about 5 minutes. You don’t want them fully cooked, just started. Meanwhile, put a large stainless steel saucepan on high heat with about 2 Tbsp fat. Start chopping the apples and removing the core, and add to the pan when it gets hot. Cook the apples for about 8 minutes until golden and add the sucanat. Allow that to caramelise the apples as you continue cooking. After another 5 minutes, add in the honey and cinnamon and stir to combine. Remove from heat and add raisins. In a pie dish, start laying the sweet potato slices of the bottom and edges to form a crust. Pour the apple mix over the sweet potato crust, pressing the mix down into the pan. Lay the remaining sweet potato slices on top to form a crust. Slice an apple and arrange on top, drizzle some honey or sugar and a little cinnamon over the top.
