  • 1 cup basmati rice
  • 2 cups vegetable stock
  • 1/2 tsp ground cumin
  • 1/4 tsp turmeric
  • 1/4 tsp ground cinnamon
  • 1/4 tsp paprika
  • 1/4 tsp smoked paprika
  • 1/4 tsp salt
  • pinch of cayenne
  • 3 tbsp dried currants
  • 2 tbsp sliced almonds, toasted
  • 1 scallion, light green and white parts only, thinly sliced
