  • 12 oz ramen noodles (without the spice packets)
  • 12 oz firm tofu
  • 2 tbsp vegetable oil, divided
  • 12 oz mushrooms, sliced
  • 4 garlic cloves, minced
  • 3- inch piece of ginger, minced
  • 1 tbsp mirin
  • 4 green onions, cut into 1 inch pieces
  • 1 lb asparagus, with fibrous ends removed cut into 3 inch pieces
  • 3 tbsp soy sauce
  • 4 tbsp soy sauce
  • 2 tbsp sesame seeds
  • pinch of red chili flakes
