Ingredients

  • 1/2 cup White beans
  • 1/2 a medium sweet potato, diced (I left the skins on)
  • 1/2 lb asparagus, sliced into 2" pieces
  • 2 cups dandelion greens, leaves removed from stems
  • 1 tsp garlic
  • 1 tbsp extra virgin olive oil
  • 1 Parmesan rind
  • 4 cups fat free chicken broth
  • 1 cup water
  • 2 stalks of spring onion
