Ingredients

  • 3 medium eggplants
  • ½ cup tahini
  • 3 cloves garlic finely chopped
  • juice of
  • 2 limes
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup fresh parsley chopped
  • Preheat oven to 350°F.Drizzle eggplants with a little bit of olive oil, then sprinkle with salt and pepper
  • Place eggplants cut-side down on a baking sheet and bake until soft and collapsed, about 45 to 60 minutes, depending on the size of your eggplants.
