Ingredients

  • 1 tablespoon unsalted butter
  • 3 cloves of garlic, finely minced
  • 3 cups water
  • 1 teaspoon fine sea salt
  • 1 cup quick-cooking grits, polenta or coarse corn meal
  • ½ cup whole milk
  • ½ cup heavy cream
  • 3 tablespoons unsalted butter
  • 1 cup monterey jack cheese, grated
  • ½ cup sharp cheddar cheese, grated + extra for garnish
  • 4 strips of bacon, fully cooked and chopped
  • salt and pepper
  • 1 tablespoon parsley, chopped
