Using precooked barbecue chicken and only a couple of other ingredients including one of my favourite things, cream cheese laced with our homemade Taco Seasoning these Chimichangas brought a welcome change to the usual common Mexican dishes we have at home. Of course you can use shop purchased Taco Seasoning but why when it's so easy to make and has a lot more flavour? Just saying....
Slice into small pieces and set aside Take a tortilla and fill with chicken, onion, beans, and cheese (rice is optional) Wrap like a burrito and put the chimichangas on a baking tray lined with baking paper
Arrange chicken tenders in single layer in pan. Pour mixture over chicken. Cover pan with plastic wrap and let marinate in fridge for about an hour (I let mine marinate for about 3 hours), turning chicken once, about half way through marinating time. Remove chicken from fridge, discard plastic wrap, and bake chicken for about 20 minutes. Remove chicken from oven, turn chicken pieces over, top with sliced green onions, and return to oven and bake for 10 more minutes (or until chicken is no longer pink and juices run clear)
