  • ½ cup melted vegan margarine like Earth Balance or a neutral tasting vegetable oil
  • 1 1/4 teaspoon vanilla
  • ¼ cup strong black coffee
  • ¾ cup all purpose flour
  • 1 teaspoon baking powder
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt

  • 1 cup powdered sugar
  • 1 teaspoon vanilla
