Ingredients

  • 3 ounces unsalted butter
  • 2 lbs cod fish fillets, skin on, cut into 4 pieces
  • 1 large onion, cut into quarters and sliced finely
  • 4 plum tomatoes, skinned, seeded and chopped
  • 4 sun-dried tomatoes packed in oil, drained and finely chopped
  • 1 1/4 cups fish stock
  • 1/2 cup white wine
  • 2 tablespoons fresh parsley, chopped
  • salt & freshly ground black pepper
  • parsley, to garnish
