Ingredients

  • 1 teaspoon olive oil
  • 1 shallot, finely chopped
  • 4 – 6 ounces Portuguese linguica sausage (or Spanish chorizo, or kielbasa) casing removed and diced (see Shopping Tip)
  • 1 teaspoon fresh thyme, chopped
  • 1 pint grape tomatoes, halved
  • 1/2 cup dry white wine, divided
  • 1 can (14 1/2 ounce) Great Northern beans, drained and rinsed
  • 1/2 teaspoon Kosher salt, divided
  • 1/4 teaspoon freshly ground black pepper
  • 1 1/4 pounds Pacific cod (or other sustainable white fish), cut into 2 to 4 pieces (see Ingredient Note)
