Ingredients

  • 290 calories per serving
  • 2 cups grape tomatoes, cut in half lengthwise
  • 1 package (9 ounces) frozen artichokes
  • 1 cup kalamata olives (optional)
  • 2 avocados, pitted, peeled and diced large
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cloves garlic, minced
  • 2 shallots, minced
  • 1 teaspoon fresh thyme
  • 1/4 cup dry white wine
  • 4 teaspoons extra virgin olive oil, (or avocado oil if you have it)
  • 1 tablespoon honey
  • 6 (6 ounce) boneless, skinless cod fillets (1"-1 1/2" thick), thawed if frozen.
  • additional salt and pepper to season the fish
