Ingredients

  • Ingredients (for 5 people)
  • 250 gr. of long grain rice (Uncle Ben's type)
  • 2 chicken breast fillets, cut in thin slices
  • 3 tbsp of olive oil (or butter)
  • 1 yellow onion, grated
  • 2 Spring onions, finely chopped
  • 1 large carrot, grated
  • 2 tbsp of all-purpose flour
  • 2 tea-cups of chicken stock
  • 1 pot of Greek yoghurt (170-200gr.)
  • 500 gr. of broccoli, separated into florets and cut in half
  • 1 tbsp of mild mustard (or whole grain)
  • 1 ½ tea-cup of Greek Kefalotyri cheese, grated (or parmesan or pecorino)
  • salt
  • pepper
