This super simple baked egg dish is just that. Thaw the spinachand squeeze out most of the moisture (no need to go overboard here, just make sure it's not dripping)
It shouldn't be news to anybody that reads my blog regularly that I love baked anything with cheese. Season with salt and pepper, remove from the heat into a bowl, and set aside
Honestly these are delicious all on their own but when you smother anything with tomato sauce and top with cheese it instantly becomes that much better
Add ricottaand mix thoroughly and then add the lightly beaten egg and mix well together. Spoon or pipe spinach mixture along the length of each half of the pastry and brush water down the length of the other side and roll up like a sausage roll, repeat with other sheets of pastry and mix
