Ingredients

  • 2, 6-8 oz skin on filets of salmon
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh rosemary, minced
  • zest of one lemon
  • 2 thin sliced from the zested lemon
  • One bunch of fresh collard greens
  • 1 Vidalia or yellow onion, sliced
  • 1 tablespoon olive oil or bacon fat
  • 1 tablespoon Better Than Bouillon, vegetable base
  • 1 teaspoon crushed red pepper
  • Salt and pepper to taste
  • Hot sauce to taste
