Baked Shrimp Po' Boy with Sriracha Mayo

  • 1 1/2 lbs frozen shrimp, thawed and tails removed
  • 2 cups breadcrumb mixture (I used 1c Panko and 1c plain, but feel free to use whatever you like)
  • 1 Tbsp Old Bay seasoning
  • 1/8 tsp cayenne pepper (optional)
  • 3/4 cup Mayo
  • 2 Tbsp Sriracha hot sauce
  • 1 tsp Old Bay seasoning
  • 1 beefsteak tomato, finely chopped
  • romain lettuce (roughly 1/2 cup chopped lettuce per sandwich)
  • 5. Place a few shrimp in the egg, coating completely, and immediately place in the breadcrumb mixture to coat. Remove and place on baking tray, evenly spacing them out to get even coverage.
