Banana Coconut Cream Pie (Vegan, Paleo, Gluten-Free)

  • 1/4 cup pecans
  • 1/2 cup raw almonds
  • 3 large Medjool dates, soaked in water for 1/2 hour prior (to make them softer)
  • 1 extra large banana (or 1/5 smaller bananas)
  • 3/4 cup coconut cream (take a can of full fat coconut milk, stick it in the fridge overnight; scoop out all the creamy chunks that float to the top, and this will equal about 3/4 cup)
  • all the seeds from 1 vanilla bean
  • 1 tbsp maple syrup
  • 1 tbsp coconut oil
