Ingredients

  • 2 cups sifted cake flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup shortening
  • 1 1/2 cup sugar
  • 2 eggs 1 cup mashed bananas (2 1/2 medium size)
  • 1 tsp vanilla
  • 1/2 cup buttermilk
  • 1/2 cup chopped pecans
  • 1 cup flaked coconut
  •  
  • Pecan filling
  • 1/2 cup sugar
  • 2 tbsp flour
  • 1/2 cup light cream
  • 2 tbsp butter
  •  
  • In a small saucepan add the above ingredients and heat over medium heat, stirring constantly until the mixture is thick. Remove from heat source and add
  • 1/2 cup finely chopped pecans
  • 1/4 tsp salt
  • 1 tsp vanilla
  • Mix well and allow to set until cool.

  • 8 ounce package of cream cheese, room temperature
  • 1/4 cup butter, room temperature
  • 2 tsp vanilla
  • 1 (16 ounce) package of confectioners sugar
  • 8 ounces of melted white chocolate
