  • 3 T olive oil, divided
  • pepper
  • 5 c fat-free chicken broth
  • 2 c water
  • 2 c finely chopped onion
  • 1 c uncooked pearl barley
  • 2 tsp crushed garlic
  • 1/2 c dry white wine
  • salt
  • 1/2 c ( 2 oz) crumbled soft goat cheese
  • 1/4 c pine nuts, toasted
