  • 250 g dried fruit – currants, raisins, sultanas or a mixture
  • 300 g black tea. We used Earl Grey for that citrus tang from the bergamot
  • 1 medium egg
  • 50 g butter, melted
  • 150 g sugar, soft brown
  • 270 g self-raising flour, or 260g plain/all-purpose flour sifted together with 2 tsp baking powder
  • Some spice, to taste
  • Pinch salt
  • 50 g candied peel
