ago, the other form of lesser known millets began to flood the market. Even the small grocery shop near my house has all varieties of millets, cleaned and neatly packed and at affordable rates
Millets are so good for health and it is always better to replace polished rice with millets. Kuthiraivali/Barnyard Podi dosa is a spicy and tasty millet dosa
Millets such as Jowar (Cholam in Tamil), Pearl millet (kambu), Finger millet (kezhvaragu), Kodo millet (varagu), Foxtail millet (Tinai), Proso millet (panivaragu), Barnyardmillet (kudraivali) and Little millet (samai)

I usually go with the below two versions to grind Idli Dosa batter when i have Varagu Arisi (Kodo Millet) and Samai Arisi (Little Millet) millet at home
I prefer a lot of greens in my grain salads (which actually makes them more of a green salad with grain, but bear with me), andmillet can go along with just about anything, it cooks quickly, is gluten-free, and is full of magnesium
Samai arisi sadham is ready and serve with paruppu / dal, rasam and vadagam. Our generation forgotten this healthy food over the years and it is difficult to find them in these days even in rural areas
Its always confusing about the water ratio for different types of millet like Varagu arisi (Kodo millet), Samai (Little millet), Kuthiraivali (Barnyardmillet), Thinai rice (Foxtail millet) and Kambu (Pearl millet)
I especially like millet because it is similar to barley, with a slight nutty flavor. They are all gluten free and add a little variety to my normal rice and potato carbs
GenerallyMillets(Kambu, Ragi, Solam, Thinai, Samai) are a natural source of protein and iron. So experimenting few recipes and this Millet Sambar Bhat/Thinai Sambar Sadham is one such experiment turned out good
