  • 2 1/4 cups flour
  • 2 tsp baking powder
  • 1 1/2 cups sugar
  • 1/4 tsp salt
  • 1/2 cup vegetable oil
  • 6 egg yolks (1/2 cup)
  • 3/4 cup water
  • 2 tsp vanilla
  • 1 1/2 tsp lemon zest grated
  • 10 egg whites (1 1/3 cups)
  • 1/4 tsp cream of tartar or lemon juice
  • egg whites at room temperature
