Ingredients

  • 1 ½ pounds of beef (a thick cut of top round is a good option)
  • ½ pound pearl onions
  • 2 medium-sized carrots
  • salt and fresh ground black pepper, to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon of dried marjoram
  • 4 large cloves of garlic
  • ¼ cup chopped fresh parsley
  • 1 bay leaf
  • ¾ cup red wine (a cabernet sauvignon or a burgundy works well)
  • 4 slices of bacon
  • ½ pound of mushrooms (button mushrooms are traditionally used
  • in this dish)
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 2/3 cup red wine
  • ½ teaspoon salt
  • ½ teaspoon fresh ground black pepper
  • ¼ cup flour
