Ingredients

  • 135 degrees
  • 1 Tablespoon olive oil
  • 2 (6-8 ounce) filet mignon, at least 1-inch thick
  • Salt
  • Black pepper
  • 2 Tablespoons unsalted butter
  • 1/4 cup shallots, finely chopped
  • 1 clove garlic, minced
  • 2 cups mushrooms, finely chopped
  • 1 Tablespoon fresh parsley, chopped (or 1/2 teaspoon dried parsley)
  • 1 pound frozen puff pastry (1 package), thawed
  • 1 large egg
