Ingredients

  • 1 kg potatoes
  • 300 ml fish stock
  • 150 ml white wine
  • 1 bay leaf
  • 1 whole fillet of smoked haddock
  • 100 g butter (separated into 2 50g)
  • 50 g plain flour
  • splash of milk (1 tbsp)
  • 3 tbsp capers
  • 6 cornichons chopped (similar size to capers)
  • 8 queenie scallops (we used frozen)
  • 50 g cheddar cheese grated
