Ingredients

  • 1 cup = 250 ml cup
  • 8 medium size bittergourds/karela
  • 3 tablespoons coconut oil or mustard oil ( divided)
  • 1 teaspoon kashmiri chilli powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon amchoor powder ( optional)
  • salt to taste
  • 1 onion ( red or white)
  • 1 tomato
  • 1/4 cup raw mango ( chopped)
  • 1 green chilli
  • 4 garlic pods
  • 1 " ginger piece ( peeled)
  • 1/2 " fresh turmeric ( peeled)
  • 10 peanuts
  • 2 teaspoons coriander seeds
  • 2 dry red chillies
  • marble size tamarind
  • 1/2 cup freshly grated coconut
  • 12. Mix well and add salt, dry ( roasted) masala, kashmiri chilli powder and garam masala.
  • 13. Allow it to cook for 8-10 minutes or till the time the excess water is absorbed and oil separates, switch off.
  • 14. Spoon the masala into each bitter gourd .
  • 15. Heat a wide pan with the remaining coconut oil.
