Ingredients

  • 8-9 inch
  • 100 grams sulguni cheese (or either mozarella, muenster, havarti–or a mixture of cheeses), diced or grated
  • 50 grams imeretian cheese or more sulguni, diced or grated
  • 6-8 ounces feta or goat cheese
  • 2 eggs
  • 100 grams sulguni cheese (or either mozarella, muenster, havarti–or a mixture of cheeses), diced or grated
  • 50 grams imeretian cheese or more sulguni, diced or grated
  • 1 egg
  • 50 grams sulguni cheese (or either mozarella, muenster, havarti–or a mixture of cheeses), diced or grated
  • mix
  • 25 grams imeretian cheese or more sulguni, diced or grated
  • mixed greens
  • 1/4 cup chopped (parsley, dill, green onion, cilantro) – optional
  • 1 egg Set aside until ready to use. For Mingrelian khachapuri, mix together half of the sulguni and half of the imeretian cheese with 1 egg and set aside–this is the topping. In another bowl, mix together the remaining cheese and set aside–this is the filling. For Imeruli, mix together the cheeses and the mixed greens. Set aside until ready to assemble the khachapuri.
