Ingredients

  • Black Bean and Bulgur Burgers
  • adapted from Martha Stewart
  • makes 4 burgers
  • 1/2 cup bulgur
  • 1 can (15.5 ounces) black beans, rinsed and drained
  • 1/2 cup grated smoked or sharp cheddar cheese
  • 1/2 cup fresh or frozen corn
  • 1/4 cup thinly sliced scallions
  • 1 large egg, lightly beaten
  • Coarse salt and ground pepper
  • Cayenne pepper (optional)
  • 1 tablespoon olive oil
  • 4 whole wheat buns or pitas
  • Lettuce, salsa, and sour cream, for serving
