To make these vegan sweetpotatoandblackbean enchiladas you don’t need to buy expensive products, all the ingredients are cheap and really easy to get, except maybe the vegan cheese, but it’s optional and you can also use our vegan cheese recipe, it’s made withpotatoesand carrots and it tastes like real cheese
Or, the night before making the chili, rinse and cover the blackbeanswith water in a bowl. If it stays too wet – maybe take a cup or two of the chili out & puree it in the blender & put it back in or let it sit on high longer with the lid off
I also think it would be awesome to make with leftover sweetpotatoes, which would easily cut your time to half – maybe less because they would just need to get hot again and not actually cook
Mash the sweetpotato, blackbeans, and lentils in a large mixing bowl. Add the remaining ingredients (except the oil), and gently stir until the ingredients are well combined
