Ingredients

  • 1 pkg (200 g) Casbah® Organic Quinoa
  • 1 tomato, chopped
  • 2 green onions, sliced
  • 1/4 cup (60 mL) chopped fresh cilantro, divided
  • 2 tbsp (30 mL) canola oil
  • 1 pkg (340 g) Yves® Mexican Veggie Ground Round
  • 2 cups (500 mL) Europe’s Best® Roasted Gourmet Fire Roasted Sweet Potato Slices
  • 1 can (398 mL) Yves® Black Beans, drained and rinsed
  • 1/2 cup (125 mL) canned Yves® Organic Golden Corn, drained
  • 1 ripe avocado, peeled, pitted and sliced
  • 1 jalapeño pepper, thinly sliced into rings
