Ingredients

  • 2 cups quinoa
  • 2 cups corn kernels
  • 1- 15 oz can black beans
  • 1 cup sliced black olives
  • 2 small tomatoes
  • 2 green onions finely chopped
  • 3-4 tbsp parsley finely chopped
  • 3 tbsp
  • 3 tbsp lemon juice
  • lemon juice
  • 2 cloves garlic minced
  • 1 tsp finely chopped fresh thyme
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1 cup of dry quinoa according to directions on package and let cool completely.
