  • 2 large eggs
  • ¾ cup sugar
  • 1 teaspoon vanilla extract
  • 4 Tb (1/2 stick) unsalted butter, melted
  • 1 cup all-purpose flour, (spooned and leveled)
  • 1 package sweetened shredded coconut (7 ounces), ½ cup reserved for sprinkling
