  • 1 cup sugar
  • 1/3 cup plain Greek yogurt
  • 2 eggs 1-1/2 cup mashed bananas (3-4 bananas)
  • 1/3 cup water
  • 1 cup all purpose flour
  • 2/3 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 cup chia seeds
  • 1 cup blueberries
  • 1. In the bowl of your stand mixer, beat the sugar, Greek yogurt, and eggs until fluffy.
  • 2. Mix in the bananas and water.
  • 3. Add in the all purpose flour, whole wheat flour, baking soda, salt, and baking powder and mix until just combined.
  • 4. Fold in chia seeds and blueberries.
  • 5. Divide batter into greased muffin tins.
  • 6. Bake at 350 for 20-22 minutes, until a toothpick inserted in the center of a muffin comes out clean.
  • Store in an airtight container at room temperature or in the fridge.
