  • 4 cloves garlic, minced
  • 3 tablespoons flour
  • 2 cups dry red wine, such as Pinot Noir
  • 4 cups beef stock or low-sodium beef broth
  • 2 dried bay leaves
  • 1/2 teaspoon thyme
  • 16 ounces fresh whole mushrooms, cleaned and quartered
  • 2 tablespoons unsalted butter
  • salt and pepper
