Boneless Pork Loin or Sirloin Stuffed Apple Pistachio Roast

  • 1 cup seasoned croutons
  • 1/2 cup chicken stock
  • 1 cup peel
  • 1/3 cup dried cranberries
  • 1/3 cup chopped pistachio
  • 1/4 cup minced garlic
  • 2 tablespoons pure maple syrup
  • 1 teaspoon minced fresh rosemary
  • 1/4 inch thickness. Sprinkle with salt and pepper. In a medium size bowl add the croutons with chicken stock and let soak in until softened. Use a potato masher to mash the mixture down or fork then stir in the garlic, apples, pistachio's, cranberries and syrup. Mix in the rosemary. Spread in the center of each surface of pork or beef onto the meat from the smallest side tightly and secure with tooth picks. Sprinkle with salt and pepper to taste.
