Ingredients

  • 1/2 [325g] bottle gourd (2 cups after cutting), can be substituted with zucchini
  • 1/2 cauliflower head [400g]
  • 1 cup [120g] chickpeas, boiled (or canned)
  • 1/2 cup [65g] white beans, boiled (or canned)
  • 1/4 cup [40g] brown chickpeas, boiled (or canned if available)
  • Spice Gravy
  • 1 [60g] sweet potato (or normal white/red potato)
  • 3 tablespoons coriander seeds
  • 1/2 teaspoon fenugreek seeds
  • 2 tablespoons tomato puree (or passata)
  • 4 [500g] fresh Roma (or Italian) tomatoes, roughly chopped (or use one can of tomatoes)
  • 1 teaspoon cumin
  • 1 tablespoon paprika
  • 1/2 teaspoon chili powder (or chili flakes), optional or more/less to taste
  • 1/2 teaspoon turmeric powder
  • 5 fresh curry leaves (or 10 dried ones)
  • 1/2 teaspoon tamarind paste (dilute in some water to remove the seeds if required)
  • 1 tablespoon minced ginger (or 1 inch cube)
